9 Reasons to Love Our Olive Oil

We grow an ancient yet the most delicious variety.

We produce the Koroneiki Olive,  originating from the southern Peloponnese, around Kalamata and Mani in Greece, a variety that has been grown in Greece for 3,000 years. This small olive, though difficult to cultivate, has a high yield of olive oil of exceptional quality. They grow from fragrant flowers, giving the olive oil its distinct aroma and feel, and these olive fruits are chock-full of antioxidants.

Our artisan extra-virgin olive oil boasts a beautiful green color, a fresh grassy flavor and a strong, peppery finish (with a hint of the bite of an artichoke). It's a strong olive oil that's been commended for its gourmet flavor by chefs, food enthusiasts and families who use it.

The olive oil stays fresh for a long time, thanks to its low acidity.

Our olive oil is 100% extra-virgin, which the International Olive Oil Council defines as oil that has "a free acidity of not more than 0.8 grams per 100 grams." Free acidity is a measure of chemical deterioration: As olive oil degrades, it releases more fatty acids, increasing "free acidity" - and therefore, rancidity. Our extra-virgin olive oil has a very low acidity of 0.21%. Which means you're getting a healthier and fresher olive oil than much of what you'll find at your local store.

We harvest early to get more flavors.

Unlike many commercial producers, we start harvesting earlier. The olives aren't fully ripen yet at that time, and they yield less amount of olive oil that we'd get if we left them to mature. Sure, it would be more lucrative for us to wait and get more olive oil. Yet that's the secret of our quality and the reason why people with discriminating palates love our olive oil: It's fresher and richer than any other olive oil.

We don't destroy the olive oil with heat.

High heat weakens the olive oil's flavors and health benefits. We never use heating procedures on your olive oil. The olive oil tree is one of a few plants that store oil in its fruits in liquid form. Because the oil is in liquid form, we simply squeeze the olives to get oil, while almost all other plants need heat to produce oils. We opt for this traditional cold-pressed method to retain the olive oil's flavors and its full health benefits.

Our olive oil is authentic, not "blended, parading as authentic."

When you buy a mass-market brand labeled as "extra-virgin olive oil," what you might actually be getting is 60% extra-virgin olive oil and 40% low-quality canola oil or any percentage that assures the end product "technically meets" the requirements to be called "extra virgin". This not only gives you a very plain taste - it also delivers fewer health benefits. But when you adopt a tree from us, you can be sure your olive oil comes straight from the grove where your tree stands. What you get is what the farmers eat too - this is our promise to you.

We use the best methods to continue a tradition of quality.

Producing the finest olive oil isn't easy. But we do it because we respect the groves and we love good olive oil. We're blessed with the ideal location (the sunny hillsides of Kalamata) and a Mediterranean climate - the two factors that help olive oil trees grow best. We mind every olive, from pruning to ensure each gets enough air and sun, to collection and inspection so that no unqualified olive sneaks in during pressing and harms the whole batch of olive oil. We don't package in plastic to retain freshness.

Olive oil reacts to light, heat and air. So once we extract the olive oil from the olives, we pack it straight into tin containers, which shield the olive oil from light and prevent oxidation. In this way, quality is preserved.
