Fresh String Beans with Olive Oil

This is one of our favorite Greek pot cooked dishes. When summer provides you abundance of the string beans more than enough for salad, add tomatoes and the freshest olive oil, then simmer them for a beautiful full dinner dish.

4 table spoons of olive oil
1 cup of chopped onion
1 lb of green beans
¼ teaspoon of pepper
2 and ½ cups of fresh grinded tomatoes
½ cups parsley
2 potatoes. Cut in cubes
2 teaspoons of salt
2 cups of water
Cinnamon to taste


Heat half of the olive oil in heavy large nonstick skillet over medium-high heat.
Add onion and saute 5 minutes. Season with a little bit of salt and pepper.
Add green beans and saute until onion is translucent, about 3 minutes.
Add potatoes and parsley and stir well.
Lower the heat. Cover and simmer for 5 minutes.
Add 2 cups of water and bring to boil.
Cover and simmer.
After 15 to 20 minutes, add the fresh tomato & a pinch of cinnamon.
Simmer until potatoes are tender (about 20 minutes).
Drizzle the rest of the fresh olive oil over the served plates

Great to serve with feta cheese on the side and a bread for dipping.
