Baked Potato with Lemon and Olive Oil

This is a very easy recipe and can be used as a side dish to a lot of dishes. The olive oil itself gives a lot of flavor to the potatoes.

2 pounds of potatoes
½ cup of olive oil
2 - 3 lemons
1 tablespoon of dry oregano
Salt and pepper to taste


First peel off the potatoes and cut the potatoes in smaller round/cube pieces, about 2 inch thick.
Season the potatoes with salt, fresh pepper and oregano.
In a separate bowl, mix well the olive oil with the juice from the lemons.
Put the potatoes into the mix, roll them around and let them marinate for a few minutes.
Add 1/2 cup of water. Then put the potatoes with the juices into a baking pan and bake for about 45 minutes to 425 Fahrenheit and until they get a nice golden color.
